This great starter culture will have you producing a variety of amazing cheese! An aromatic, mesophilic culutre, this culture is used to make cottage cheese, neufchatel, chevre and even more soft cheeses. This culture can also be used on more flavorful aged cheeses such as baby swiss and bleu cheese. Comes with 8 direct-set starter cultures for making your own fresh cheese. The direct-set cultures are one-time-use only and cannot be recultured. These easy to use cultures require no maintenance or care and culture at room temperature (72-77 F), simply store in your freezer until ready to use.
Use as directed by your recipe or try the following: 1 packet of fresh cheese starter per gallon of milk, 2 packets per 2-4 gallons, or 4 packets per 5-10 gallons. Avoid using ultra-pasteurized or UHT milk. Heat milk and culture according to temperatures outlined in your recipe.
