Lovely!

Excellent recipe! No modifications but added alcohol boost, turned out spicy, roasty, and dark. Well worth the purchase.

I made this for the holiday season in 2011. I let it age for about about a month before force carbonating and bottling. Ireally liked it, and ended up giving most of it away as Christmas gifts to friends and neighbors. It received many very positive reviews. The only problem was that by the time everyone got a bottle (or two), I had none left, so I had to order another kit.

Great beer. I made several modifications to the mini-mash recipe. First, an extra half pound of chocolate rye malt was added to the mash. Second, 2oz Sumatra coffee and 2oz of organic cacao nibs was added in last 15 minutes of boil. Third, added tincture of cacao nibs and more coffee (2oz of each) soaked in 6oz rye whiskey to secondary for last 4 days. Tincture should be prepared, sealed, and refrigerated for at least a week before adding. Easy beer to make, great finished product.

I have only brewed about a half dozen beers so far and this one was by far the best. After only being in the bottles 2-3 weeks the taste was nothing special however as time went on this particular beer aged very well. After being in the bottles around 6-8 weeks it tasted superb. I added maybe 1/2 - 1 tsp of cinnamon and clove and it worked very well. I will definitely brew this one again!

I brewed this in early October so that I could drink it while setting up my Christmas tree in early December. I added an extra tsp each of nutmeg and cinnamon because I favor stronger spicing. I also cold crashed in the secondary for one week, with gelatin. Wow - what a great, clean beer. The munich malt contributes a light sweetness while the beer also exhibits good roastiness. This is a great porter, even setting aside the spices. Nice brown head, deep ruby-brown-black color.
