PC Old Ale Blend Wyeast

Species : Saccharomyces cerevisiae & Brettanomyces blend
Fermentation Temp Range (°F) : 68 - 75
Apparent Attenuation Range (%) : 75 - 80
Flocculation : Medium
Alcohol Tolerance : 14%

Pitching/Fermentation : An attenuative ale strain mixed with a small amount of Brettanomyces. This "Old Ale" blend ferments well in dark worts, producing fruity beers with a pleasing complexity.

Notes : The Brettanomyces adds a pie cherry-like flavor and sourness when used for prolonged aging. A great yeast choice when trying to replicate older beer styles popular in English brewing.

Best Styles : Old Ales, British Strong Ales, English Barleywine
