Pitching/Fermentation : This strain is the classic farmhouse ale yeast. A traditional yeast that is spicy with complex aromatics, including bubble gum.

Notes : It is very tart and dry on the palate with a mild fruitiness. Expect a crisp, mildly acidic finish that will benefit from elevated fermentation temperatures. This strain is notorious for a rapid and vigorous start to fermentation, only to stick around 1.035 S.G. Fermentation will finish, given time and warm temperatures. Warm fermentation temperatures at least 90°F (32°C) or the use of a secondary strain can accelerate attenuation.

Love this yeast!
It's awesome for saisons as it has a more complex flavor profile than the 3711 French Saison yeast. It does stall sometimes around 1.030, but if you turn the heat up (I had mine at 95 degrees), it will finish and the attenuation is excellent. It's definitely not the beast that 3711 is. I've had imperial saisons finish at 1.008 and regular saisons go down to close to 1.000.
