Flocculation : Medium to Low
Alcohol Tolerance : Medium to Low, ~4.8%

Pitching/Fermentation : Thrives with simple sugar fermentations such as wine and cider, also ferments maltose. Ferments across wide temperature range resulting in aromas ranging from neutral and clean to spicy and fruity.

Notes : This yeast blend, isolated from spontaneously fermented apples off the coast of Denmark, that is a blend of two Saccharomyces cerevisiae and one Torulaspora delbrueckii. This unique blend of yeast results in a specific aroma profile, that is noticeably more prevalent at higher fermentation temperatures, that is reminiscent of classic European styles such as Belgian Saisons or German Hefeweizens.
