A winemaker needs to crush and press fresh fruit before making wine from it. The Vintner's Harvest Fruit Wine Bases allows a winemaker to bypass that difficult and time-consuming procedure because these wine bases are fresh fruit packed in their own juices with nothing else added: no sugars and no sulfites. The label includes recipes for either 5 gallons of light medium-bodied wine or 3 gallons of a full-bodied more flavorful wine.
Like the apple concentrate, the Elderberry wine base is made from an adjusted concentrate to insure the quality of the product. It contains no fruit pieces that would soften and brown, and the concentrate is adjusted for the end purpose of fermentation.
Additional ingredients like table sugar, acid blend, yeast nutrient, pectic enzyme, potassium metabisulfite or sodium metabisulfite, potassium sorbate, and Red Star Premier Cuvee yeast are required to make wine from the fruit concentrate, but are not included.
