Three Country Cabernet with Grape Skins California, South Africa, and Spain
Go big or go home--three homes to be precise. This stunning blend of Cabernet Sauvignons features a bouquet of ripe black fruits, with hints of cocoa, vanilla, and oak. Firm, dry, and jammed with flavors of blackcurrant, blackberry, blue plum, vanilla, and spices, notes of black tea, spice, and oak idle on the finish.
California’s Sonoma County boasts a long growing season with
sunny, warm, dry days and cool evenings allowing grapes to ripen slowly and evenly. Swartland, just north of Cape Town, South Africa, is hot and dry, providing for lower yields, but smaller, more concentrated fruit. Spain is hot and dry, but its elevation generates a workable balance, with temperatures dropping significantly at night. Many producers manipulate the dry weather by spacing vines further apart, reducing competition for resources, resulting in lower yields with higher quality fruit, and more concentrated, heightened flavors.
Robust, flavourful dishes such as beef and mushroom kabobs, rack of lamb, prime rib roast with root vegetables, or beef tenderloin wrapped in bacon. Perfect pairing for 2 to 4 year old Canadian cheddar or 70% dark chocolate.
