This mold is ideal for use when making up to 2 pounds of cheese from 2 gallons of milk. The mold will function with any New England Cheesemaking press and can handle a press weight of up to 100 lbs. This smaller mold does not require the amount of weight for pressing as the Large Mold for Hard Cheese (AVAILABLE HERE!
) and therefore does not need a closed bottom to contain the curd mass. The open bottom also provides the best possible drainage. Made from a food grade polypropylene, this mold is imported from France.
