I made this wine nearly 4 months ago and am just now enjoying a glass. I am quite pleaseantly surprised at how well it turned out, expecially given my first impression about 1 week into the ferment.
As of now, it has a bold , stone-fruity flavor and mouthfeel as described, yet is dry (but overly so). I tried the Viognier because I typically enjoy reds and the description of mouthfeel and body for this one piqued my curiosity. I was not diappointed.
I do want to make a cautionary note: do not taste this, or pay attention to its aroma, prior to 3 months. Being my first white, I was initially disappointed by a “beer” flavor and smell at first racking. I had little hope, but went ahead and completed the ferment/clarification per the instructions. At the next racking I was still disappointed, but I figured it just still needed time. Then I just forgot about it while I worked on a mead recipe. Today, at about 4 months in the carboy, I decided to taste again, and WOW, what a difference the time made. This wine is truly delightful, and everything the desriptions claim it to be. This one is definetly worth a try, especially if you like bigger body and stonefruit flavors.
