Wine Juice Concentrate

One of WineMaker magazine's top 100 wine kits for 2014.

The intense fruitiness of this beguiling wine suggests rich sweetness, but it shows a surprisingly dry and aromatic finish. A delicate yellow color, tinged with the variety's typical 'green-gold' hue, it bursts out of the glass with apricot, peach and spice aromas. As it matures, it can also display hints of jasmine, honeysuckle, kiwi, mint, orange blossom and even mango! While higher in alcohol than many white wines, it drinks well young nonetheless. Lower acidity makes it friendly to a wide range of foods, but it's 'soft but strong' character makes it excellent for sipping alone.

Sweetness: Dry
Body: Medium
Oak Intensity: None

The 16 liters of varietal juice makes 6 gallons, providing approximately 30 bottles of wine.

I made this wine nearly 4 months ago and am just now enjoying a glass. I am quite pleaseantly surprised at how well it turned out, expecially given my first impression about 1 week into the ferment. As of now, it has a bold , stone-fruity flavor and mouthfeel as described, yet is dry (but overly so). I tried the Viognier because I typically enjoy reds and the description of mouthfeel and body for this one piqued my curiosity. I was not diappointed. I do want to make a cautionary note: do not taste this, or pay attention to its aroma, prior to 3 months. Being my first white, I was initially disappointed by a “beer” flavor and smell at first racking. I had little hope, but went ahead and completed the ferment/clarification per the instructions. At the next racking I was still disappointed, but I figured it just still needed time. Then I just forgot about it while I worked on a mead recipe. Today, at about 4 months in the carboy, I decided to taste again, and WOW, what a difference the time made. This wine is truly delightful, and everything the desriptions claim it to be. This one is definetly worth a try, especially if you like bigger body and stonefruit flavors.
