Incredibly good
Brewed 10 gallons, all grain in Blichman electric tower of power set up. Brew largely wen like clockwork, though had difficulty hitting the high starting gravity, leading to some additional boiling and less volume than targeted. The finished product turned out incredibly good and is getting better with age. Head to head in blind taste tests with Rochefort 10 across many beer lovers, some Belgian lovers and some not, had it consistently holding up respectfully, though with a sweeter and less carbonated character. The oversweetness probably resulted from the boiloff, leading to greater concentration. nevertheless, it is one of the best beers we've brewed and has been a real crowd pleaser, though the ABV had led to more than a few casualties. In the future, I may dial back the candi sugar or tweak process to improve brew efficiency a little to reduce the sweetness.

Fantastic
I travel to Belgium several times a year and discovered Rochefort 10 in a local bar in a small town near Antwerpe. I was so excited to find that AustinHomeBrew had these clone recipes. I made the All Grain version and it came out fantastic. Just a delicious beer. My final gravity was lower than the recipe said it should be so it ended up at 11% ABV. Awesome. I currently have the extract version of Rochefort 8 and Westmalle Dubbel in secondary. Can't wait to bottle them. Then the painful wait begins. But it is worth it. I am off to Belgium next week and will be buying official Rochefort glasses so I can give the beer a proper pour.

Classic Review
Brent the Brewmeister brought over a bottle of this spectacular big beer as we were brewing the newest batch and I can hardly wait to try some of our own! I can honestly say the next few months are going to be a nightmare waiting for this one to mature! Truly a great recipe and a great way to get together with freinds and brew.

10 years of brewing experience... I brewed an extract batch of this in Oct2010 wow beyond incredible. This was absolutely the Greatest beer i have ever had. A second batch brewed in March2011 brewed warmer as i had difficulty keeping it cool. It got up to 72-74 degrees for a day or two before i could cool it down. This warmer brewed beer was spicier and not as smooth and enjoyable but still very very good. Overall this is one of the best brewing experiences and Beers i have ever made. I look forward to the challenges of brewing this beer all grain.
