Potassium carbonate is used to reduce acidity in wines. Adding 1/2 teaspoon per gallon of must will reduce acid by about 0.1%. After the addition of potassium carbonate, the fermenter must be stored cold for several weeks. During this cold stabilization, the tartaric acid will drop out. Unlike calcium carbonate, potassium carbonate will not create a chalky taste in the wine.
