Solid Brew Despite Summer Heat

I ordered this kit on a Friday in mid-June. I included an ice pack. The stuff didn't get to my house until Thursday. That's 6 days. The ice pack was completely melted, and the yeast was warm. I put it in the fridge and brewed that next Wednesday. I used the yeast just to see how it would go. About 16 hours after I pitched the yeast, it was chugging along. Temperature in the fridge was maintained at 65 (fridge temp not fermenter temp). About 30 hours after pitching, I had to put a blowoff tube on the carboy. I kept it on for a couple of days. Once fermentation slowed to a bubble or two every minute, I racked to secondary and took a gravity reading. It was at 1.017. Aroma and flavor were spot on. The color was a nice cloudy orange. It has had active fermentation until 3 days after I transferred. I have not bottled yet. I anticipate that it will be spot on. Moral of the story. Order two (or three) ice packs, but if it shows up warm. See what happens. I'll edit once I bottled and try it out.

Great beer

I made this kit twice and it came out fantastic both times. The first time I made it, I didnít have a hydrometer and there seemed to be a lot of activity in the airlock after a week so I left it another 4 days before transferring to the secondary and secondary for another 10 days and it came out great. I kegged it and force carbed it at 13 psi at 37F for a week. It seemed to be a little flat so I cranked it up to 16 psi. By the next week, it was really foamy. There seems to be controversy over the carbonation level for a hefe. I found a post somewhere from a Paulaner rep that the US hefe is carbonated to 5,4 g/l which converts to 2.7 volumes of CO2. The style guides recommend much higher. The second time, I kept it at 13 psi and gave it a couple more days to carb and it had good carbonation and wasnít a foamy mess. I didnít bottle either time so canít comment on bottling.

Definitely a great brew, three weeks primary and 5 weeks bottle conditioned, no need for an alcohol boost. Definitely my favorite from ahs i would recommend anyone try this especially if they havent tried a weizen. Go liquid yeast and give a little time no dissatisfaction on this end

As mentioned in my previous review when this was the 1st home brew I ever tried (and it came out perfect), I did order and make it again. The second time I added fresh lemongrass and Kafir lime leaves for a Thai twist. Came out wonderful again. See, I have tasted this fresh out of a tank in Germany and when Paulaner finally makes it to our shores in the US, it's no longer fresh and alive like where it was born. With this recipe it can be born here in the states and this kit has my highest regards. It's a very accurate clone which is stable, easy to brew and provides a strong palate for additives as I did with the lemongrass. Everyone that drank it loved it, went well with Thai food and it got drank in a hurry.

Classic Review

I did the all grain version and used yeast nutrient and dry yeast. Holy moly the fermentation was fast and vigorous! Use a blowoff hose because when I checked it 24 hours into the primary, my fermentation chamber looked like an episode of CSI. This was a quick one too. It was 8 days from boil to keg. I great party beer too.
