Q: If I rack to a secondary and lager for 3 weeks, will it hurt to leave this in that long before kegging the beer?
A: So long as the batch is in a sealed container with a closed head space close to the top of the beer it can be left to lager for 2-3 weeks without a problem
Q: I am assuming the gelatin finings are added to the beer during or after the fermentation process. How much time is required for the finings to remove whatever cloudiness they are able to before the bee is ready for bottling?? or
A: The finings do work fairly quickly. This will be on a case by case basis depending on how much sediment is in the batch but it can work in a bout 2 days or in some cases take about 1 week to full clear
