Well this one was interesting - the unexpected process - not the beer :). I brewed this a day before leaving for vacation for a week. Being August, I placed the primary in the basement, different from what I normally do because I knew the 1st floor was going to be too hot without AC on in Aug. My wife had the cleaning lady the day we left. She did not see the fermenter bucket and inadvertently threw a comforter over it, knocking the airlock off! When I cam back a week later, I thought the beer was ruined. But I continued the process in the secondary. I saw pretty heavy fermenting activity all they way up to bottling day. I was convinced another strain of yeast entered the brew. I bottled, and just tried the beer after only 2 weeks. It came our great! Smooth, not hoppy (just how I like it). Had some friends taste it and they loved it. I'm sure it's only going to get better with age. I lucked out with this one!
