A specially formulated culture blend creates delicious feta cheese that's great for salads, entrees or just enjoying! This is a medium-fast to fast acidifying culture with no citrate fermnetation (gas production). The additon of L. bulgaricus and L. helveticus results in a higher amount of proteolytic activity. This improves both the taste and creaminess of your feta cheese. Comes with 8 direct-set starter cultures for making your own feta. The direct-set cultures are one-time-use only and cannot be recultured. These easy to use cultures require no maintenance or care and culture at room temperature (72-77 F), simply store in your freezer until ready to use.
Use 1 packet of feta starter with 1-4 quarts of goat milk, though other milk types can be used as well. Avoid using ultra-pasteurized or UHT milk.
