Terrific beer
I brewed this for my wife and friend that both love Grande Reserve. We were a little impatient and tasted at 2,3,4 and then 6 months.Aging to 6 months finished the beer. I am ordering another kit now in preparation for the fall.

So after my 11/21 comment: This has turned out to be all that the aroma promised... despite the fact that I kegged it at 15 days; about a week too early. Even though I kegged it too early and have the ever so slight yeast bite because of it... it is one of the best clones I have ever brewed... this comes VERY close to Chimay. Either you like Chimay or you don't. If you like Chimay you will really like this recipe. It is VERY high in %. My wife and her friends absolutley love the taste. If you like Chimay try this recipe... just be VERY patient about letting it finish in the Secondary... probably wouldn't hurt to Rack into a 3rd just to clear up a little more. Will definatley do this one again and again... ENJOY!

Thought I would try my first mini-mash with the Chimay Grand Reserve since it is one of my favorites. This kit was fool proof. I fermented for 7 days and then put into a secondary for 8 days. Final gravity reading was what it should have been. It came out to be 8.5% ABV without using the alcohol boost. I couldn't wait, so I tried one after just 7 days conditioning. Of course it was not done yet and so it didn't have much head but it was carbonated and tasted great. My wife and I bought a Store Chimay Grand Reserve and did a taste test. I would say that even after just 7 days I would give it a score of 9.5 out of 10 for tasting like the "real thing." I'll be doing this one again. Thanks AHB!

I did the all grain and brewed this back in early June, so it's been over the four months they stated in which for it to condition. Brew day was great because I did some other nondescript Kolsch and Pale Ales and the wort on this was delicious. I fermented in my 6.5 gal carboy and fermentation was fierce and memorizing. After a month primary I put it into secondary and let it sit. I have Chimay once or twice and this is extremely close. Great color, lacing, hints of caramel and chocolate and a slight bite of alcohol. It is a heavy brew. I had two pints, among other things, and you could tell it packs a punch. Great recipe, great beer and it is going to be a hit tomorrow at Thanksgiving.
