Belgian candi sugar is cystalized beet sugar. It comes in diamond form without strings, and is used to produce some of the unique Belgian beers. Candi sugar increases the alcohol level and can be used also to change the color of the beer. Clear candi is generally used for pales ales and Tripple beers.
Usage: The amount used depends on the recipe or individual taste. Generally, the range is 8 oz to 2 lb in a 5 gallon batch of beer.
