I don't mind being creative, especially when I can save some $. Since this is like Forest Gump's box of chocolates (you never know what you might get), My last kit came with Nottingham yeast so I added some Lallemand Abbaye Ale yeast to give me some flavor options. If the grains are dark, I'll use the Nottingham. If they are light I'll use the Lallemand Abbaye Ale . The grains were leaning to the dark side (porter-ish ?), so I started with the Lallemand yeast and after two days I added the Nottingham. I also added 5 Lbs. of Munich LME. Looks and smells like a Belgian Dubbel but only time will tell as I probably will put this up for 3 months to mellow out. It clocks in around 7.6 ABV YMMV

Great kits! I bought 2 of these. One batch had a lot of darker grain and the other kit looked much lighter. Mashed the darker one first and decided I would make a stout batch. Great kits to test your skills and use up hops you have. Learn to hop / Utilize miscellaneous hops you have once you mash instead of pre-planning a batch. Makes for a fun learning experience and you can do it on the cheap side since these kits are so low priced!

I really enjoyed this kit, it made a pale ale which is brewed to 4 gallon since the OG was running a little low. I dry hopped then kegged it and the ale is excellent! lightly hoppy, not too bitter all around a fun experiment.
