This is a full-bodied Kolsch style ale. It is a true Texas-German styled beer in the tradition of the early German settlements in central Texas.

Specialty malts: Carapils®, red wheat
Featured hops: Crystal

O.G. = 1.052
F.G. = 1.012

Perform a secondary ferment at 55 to 60 degrees for 10 to 14 days. Allow to age at least 5 weeks after bottling, same temperature range. This will reward you and all that drink this fine ale.

I brewed this using all grain for a family 4th of July party. Most of them prefer lighter beers so this Kolsch sounded like it fit the bill. After about 3 1/2 weeks in the bottle it was a big hit....which only gets better with age.

Agreed on the secondary. This is a great beer, everyone loves it, but the sulphur head takes a while to work its way out.

This was a great kit...we did the mini mash, was our first ever brew...and now we're hooked...we followed the 1-2-3 rule and it worked just fine... (one week in the primary fermenter, two in the secondary carboy, three in the bottle)...Even my beer snobby friends loved it...We're making a Hefeweizen, but we will soon be buying this kit and doing it again...my fridge seems empty without a bottle of this Kolsch in it...
