Won our local Oktoberfest

This is my second attempt at brewing beer. Took about six weeks start to finish. I want to try it in a keg next time, just did regular bottles this time. Tried it about three weeks in to bottling and it was good but, it gets better every week. A really nice seasonal fall ale. Strong Apple pie vibes, with a hint of clove at the finish. Very drinkable, with a solid balance of traditional malt and the extra spice flavor. I would buy this beer off the shelves just like I do for my favorite Oktoberfest beer. It won our annual Oktoberfest brewing competition head to head with 8 other brews (not all the same kind of beer). Might even try one more batch to be ready right at Christmas! 10/10

Just give it time

Made this last year and was good but the spices had an ìoldî flavor to me. No complaints from anyone else. I kegged half and bottle conditioned half. I took what was remaining and stuck them in the back of the fridge- 6 weeks later I remembered them and tried it again- delicious! Tasted so good, so balanced, so fall/winter-ish. Excellent. This year I am brewing it in August and will sit on it until October where I should have a great spiced fall beer. Just give it some time.

Ironically, despite numerous issues during this brew day, the beer turned out excellent. It was extremely popular with family and friends that weren't scared of the higher ABV. I had issues with my strike temp and ended up doing a decoction step mash trying to resolve it. As a result I had a 90 minute step mash instead of a 60 minute steady mash. My OG was slightly higher than the recipe called for. As with most of my ales, I rushed this into the keg as soon as I hit FG, which was about 6 days. I force carbed it and was drinking it within 2 weeks of brewday. I'd say that it took 4 weeks (3 after kegging) before this beer really balanced correctly. If you drink it young, expect the spices to punch you in the face and leave a lingering after taste that's less than ideal. Once it's had a little time, it's spot on what I was looking for which is a nice balance of malt and spice characters. I will probably do this one again next year.
