This malty amber ale is similar to an Oktoberfest. However, it uses ale yeast, so it is ready to drink sooner. This "Festale" also features our Apple Pie Spice Pack that includes cinnamon, nutmeg, and vanilla powder. This beer is perfect for friends and family gatherings throughout the fall and winter holidays.

Specialty malts: English Crystal, chocolate malt
Featured hops: Northdown

Ironically, despite numerous issues during this brew day, the beer turned out excellent. It was extremely popular with family and friends that weren't scared of the higher ABV. I had issues with my strike temp and ended up doing a decoction step mash trying to resolve it. As a result I had a 90 minute step mash instead of a 60 minute steady mash. My OG was slightly higher than the recipe called for. As with most of my ales, I rushed this into the keg as soon as I hit FG, which was about 6 days. I force carbed it and was drinking it within 2 weeks of brewday. I'd say that it took 4 weeks (3 after kegging) before this beer really balanced correctly. If you drink it young, expect the spices to punch you in the face and leave a lingering after taste that's less than ideal. Once it's had a little time, it's spot on what I was looking for which is a nice balance of malt and spice characters. I will probably do this one again next year.
