First beer I've brewed for about 5 years. Did the mini-mash. Only beer I've ever made that my wife likes. It was ready to drink for Christmas 2006 and was a perfect winter celebration beer. This is a malty beer and is wonderful. Slightly sweet at first taste but doesn't linger as a sweet beverage. Not too bitter -so if you are looking for knock-you-down hop flavor try a different recipe or add more hops to this one. I hit the initial and final graveties on the money so the abv is high for this brew. You'll enjoy it.

After reading other comments on the headiness of the Scotch Ale I was concerned I had done something wrong. Oddly mine had very little head after 12 weeks in the bottle. What I have found is after a couple days of refrigeration the head shows up. I'm still not sure if I did something wrong but what a wonderful beer! I brewed for a friend's birthday (I normally keg.) Not sure I would brew for myself but it is a very tasty Scoth Ale.

Just cracked open a bottle I saved from Thanksgiving 2007 (1 year old). It is absolute heaven! Highly carbonated, so you need to pour with a good head and let it settle. The flavor is unbelievable; I don't have anything to compare it to. I've got one bottle left, can't decide when to open it. I'm going to brew another batch right away for a long-term hold.
