Over the years, this has been one of our most popular holiday recipes. Rich and robust, it includes traditional holiday spices: cloves, cinnamon, nutmeg, and ginger root. The recipe is loosely based on Anchor's yearly Special Holiday Ale.

Specialty malts: chocolate malt, English Crystal
Featured hops: Mt. Hood, Saaz

Complex & Delicious
I brewed the LMM version for a company Christmas party. About 17 days in primary then kegged and forced carbed. My friends and I are all hop heads, but we all preferred this over a Pliny the Elder clone I brewed around the same time. It's very well bodied, the spices aren't over the top, and it offers a very complex flavoring. This will definitely be brewed again next year.

good Xmas beer
This was my first all grain recipe and I doubt that I'll be going back to extracts. Did my mash and boil the last week in October, 1 week in primary, 2 in secondary, then bottled. Tried after 3 weeks in bottle and the spices came through a little more than I liked but by the time Xmas rolled around this beer was awesome. Great, easy to drink holiday recipe. Thanks AHS!!

Yummy spiced ale
Made the DME version. After 3.5 weeks in bottle properly carbed. Just split two bottles with my son now for Christmas dinner. Very subtle spice flavor. Yummy ale flavor. Dark red color. Will do this one again next year.

I brewed the liquid extract version of this kit exactly to the AHS recipe, and fermented for 7 days with the Munton's gold dry yeast. I went straight to bottles with this one in mid-September. At 2, 4, and 6 weeks in the bottle the spices were very strong. At about 9 weeks the spices had mellowed greatly, and it was a very smooth beer with a nice holiday spice flavor. Very nice, especially if you like holiday spices, but be sure to brew it early to let it age for at least two months or more. The head on this ale was completely gone in about 15 secs, but I have since started using filtered R/O water with later kits, and the head stays around till the last drop. So it was not the fault of the kit because AHS uses very good quality ingredients. So if you have head retention problems try using a better quality water. If you don't like spices very much try the Winter Warmer kit.

Bottled this baby on Sept 21, tried 1 bottle on Sept 28, not bad, tried one today, even better. I will try one more next week, then forget about it till the 2nd week of December. I will comment then!

2 weeks in primary, then bottled (I do not have a secondary). After 2 weeks of priming, the spices were very sharp and almost overtake the beer. However a month later the spices have mellowed out and it is a VERY nice and well rounded beer. My wife swears that it tastes like XMas and i have to agree. If you are looking to make this for the Holidays then i suggest brewing at the begging of November and letting it age until mid-December.

Fantastic! Very pleased with how it turned out. Everyone who has tried it, has had several and not all who tried it are ale fans. Some of the bottles, taste like a liquid version of those little cinnamon candies. Very tasty, enjoyable, and will brew again!

I brewed the partial mash of this last month and have it kegged. I had very high hopes for this one. The clove taste seems almost overpowering to me. If you like clove, you'll LOVE this beer, but to me its a bit unbalanced spice wise. I guess I was expecting some of the other spices to balance it out. Not a bad beer, but I think next year I'll try one of the winter ales w/o clove as an add-in.

Brewed this mini-mash with White's Lab yeast. This has been my first beer where people were asking for more. Spice comes through really nice and the mouthfeel is heavy enough to realize it is ale while not overpowering to an American lager drinker. 30 days in primary fermenter/6 weeks in the bottle. I'm ordering another kit for this right now to try and get one in before the end of christmas. For some added kick, rim your beer glasses with cinnamon and sugar with a little powdered ginger and nutmeg mixed in.
