Very Good Example of Oktoberfest Bier
I brewed the extract with specialty grains version of this beer in July 2015 for an Oktoberfest party in late October 2015. I did the initial fermentation at 50 degrees for two weeks, did a diacetyl rest at room temperature, then lagered at 35 degrees for two months. I used the WL liquid yeast for Oktoberfest. The beer was a hit, though I think I will make a Festbier next year because a traditional Oktoberfest may be too heavy for all my friends who don't appreciate a malty beer.

Classic Review
Brewed the all grain version of this as an ale (with American Ale WLP060 yeast) since I'm not set up to lager yet. The American Ale yeast said it came close to a giving lager flavor so I gave it a shot. Fermented 10 days in primary & 7 in secondary, with 3 weeks in the bottle this is a great brew with a beautiful golden Marzen color, good head & nice hop balance. I'll make this one again for sure.

I just brewed the LME kit and got an OG of 1.062. It's supposed to be 1.054. The kit included a 5# tub and a 3# tub of LME. Turns out the one marked 5# is actually a 6# tub. Woops! Too late now. ABV will be higher and IBU will drop a bit. Should still be a great helles beer, but not what I ordered. Check your ingredients closely. I'll report back when I taste it.

Brewed 09/01/13, fermented at 61 degrees, moved to 41 degrees 09/14/13, did not secondary. Bottled 10/05/13 and drank first bottles after one week conditioning and carbonating. A really good Oktoberfest. Only thing I have to compare it to is a Schlafly Oktoberfest out of St. Louis. These two beers were night and day. The AHS recipe was so much better than the Schlafly it wasn't even close. Would brew again.

Classic Review
Finished and kegged this brew right before huricane Sandy. Man this was good stuff. A friend of mine had to stay with me because he got flooded out of his house up here in NYC. He was in the Army stationed in Germany for several years. He picked the exact style of this beer out immediately on the first sip. He said it was the best Marzen he has had outside Germany. I will definitely be getting this again.

Brewed this as a Mini-Mash at the end of May. OG 1.051 FG 1.013 6 days in the fermenter, 25 in the secondary, and kegged the end of June, planning on it being ready for September. Keg stored at 55F until it was put on the tap around Sep 7th. Well worth the wait!!! Nice and clean, slightly bitter finish, with a nice head and aroma. Going to plan on brewing again in March, like I was supposed to....., but it still is worth a repeat..., and I will!

Feb. 9 2014 As usual I had set aside several bottles of this brew to see how it aged. Here it is 6 mos. after bottling I have to re-assess this beer. It goes well with cheese and summer sausage and crackers. It reminds me of an English Stout beer the bitterness is pronounced but not offensive. This is an acquired taste type of beer. On a scale of 1-10 I would rate it at a 5. I used the Mini Mash with the White Labs Oktoberfest/Marzen Lager WLP820 yeast and the alcohol boost. OSG= 1.060 FSG= 1.012 6.3%.

I have made the mini-mash version of this recipe with great results. I would like to try the all-grain version., but was wondering why this version seems to use less Munich malt and much more Pilsner malt?

the Munich malt in the mini mash or extract versions is increased since the efficiency of how well the color flavors are extracted is lower that when using all grain, so we can get away with using a lowaer ratio to get the same result

For this recipe, AHS Octoberfest/Marzen (3B)-All Grain, I see no indication that bittering hops are added and I am wondering if there is an error in the recipe I printed? I see there are aroma and flavoring hops mentioned, but again No bittering. Is there supposed to be a bittering hop addition at the beginning of boil? Please adivse. Thanks.
