Nice light summer beer. This is as close to a "lite" beer as I'll ever brew, probably too light for me (and most people who appreciate beer). The recipe needs a little more on the bitter side as well. If I brew again I'll probably add another half oz of some sort of noble hops to get closer to style expectations. The yeast produced the perfect amount of characteristic fruitiness a Kolsch should have. Great head coming out of the keg. Came out perfectly clear after cold crashing it for 2 weeks in the keezer.

Wow - great beer! Mimi-mash kit with White Labs liquid yeast. This was my first experience with White Labs, I've typically done dry yeast or Wyeast on occasion but selected the liquid to get the most out of the style. Well worth it! Light and refreshing with a solid mouth feel. Small hints of fruit and satisfying complex flavor that I'd describe as nuanced and subtle. If you're pounding it down you won't notice but let it sit on your tongue a second and it's there in all its glory. A plus was it's ready very quickly in the bottle. Great beer, will be making this one again!

I did this mini-mash with DME in March and just finished drinking the 5-gallon batch. I was pleasantly suprised by this one - I was expecting a straightoward "lawnmower" type of taste, but found this recipe to produce a zesty hop bite and subtle fruity flavor from the kolsch yeast. The flavor is complex. This recipe is definitely not something you can replicate with a store-bought beer, which it made it a particular favorite with my friends. A few points of caution, however - it's summer now, so beer careful about letting your fermenter get too warm (the kolsch yeast is finicky and when I brewed this my temp was borderline too high). Also, the liquid kolsch yeasts take a very long time to clear in the secondary. Putting your secondary in the fridge supposedly helps, but unfortunately I didn't have room in my fridge for it - after three weeks in the secondary, my kolsch was still hazy. It was delicious, but cloudier than a stylistic purist would call for.

This was my first try at homebrewing. I made the mini mash kit and just followed the directions- very easy and clear instructions. Bubbling didn't start for two days (I think the texas heat getting home might have harmed my yeast), but once it started it went like crazy for a week. So ten days primary, two weeks secondary, bottled and conditioned for 3 weeks before I really started sharing and drinking it. Initially on bottling the hop aroma and taste was quite strong but after three weeks it was fairly tame- I'm not a fan of bitter beer but it could have maintained some more hop flavor and been JUST FINE if you ask me. Pouring a glass gives a nice dark golden amber beer and about a finger width of creamy tan foam which stays around a while. This beer definitely drinks very nicely and has gotten rave reviews from coworkers and friends. I just reordered enough for a ten gallon batch (all grain this time) so that I will have enough to last while I play around with my next project- one of AHS's belgians! I must add- since moving back to Indiana I have visited several homebrew stores and AHS beats them all. The kits are very well organized and packaged compared to the local stores and I feel much safer with the "clean room" prep that AHS uses. I just feel uncomfortable digging a scoop of grain out of a rubbermaid on the shop floor at these other places.

Brewed the extract kit and followed the 1-2-3 method (1 week primary, 2 weeks secondary, and 3 weeks in the bottle). The beer is smooth and easy drinking. The malt profile is a little more prominent than I expected, but it's still good. I wish it was a little bit lighter.
