All grain makes great brew
This is one of my favorites. Great all around drinkable beer. I like to double up on the bittering hop stage add 2 lbs flaked rice and it comes out perfect.

Love this stuff. Even though it's still a little green after 4 weeks, it's very drinkable. Very mild hop flavor and great as a session beer. Will likely be ordering this again.

I have brewed about 20 gallons of this all grain. It is a hit. The first time I must have it my mash temp perfect because it was very dry, malty and enjoyable. Everyone loved it. I am just about to order another 10 gallons of it. A crowd pleaser.

Extract. 2 weeks primary, 6 weeks kegged. I'm disappointing with this beer. The extract kit is really about as basic as it gets. 7lb pale, 1oz cascade, English dry ale yeast. There isn't enough malty to compete with the hops and the yeast flavor. I cleared the keg with gelatin and it's still overpoweringly yeasty. I won't be making this again, but if you do I recommend doing a better job of getting the yeast out than I did.

Next time I brew this I'll brew 10 gallons. This stuff goes down quickly on a hot day.

After 2 weeks in the bottle (MM kit after 2wk prime, 1wk secondary), this has turned out to be a wonderful session beer. Lightly bittered with a pleasant Cascade flavor, and just enough body to feel like a "real" beer. I could probably serve this to anyone without hearing a complaint.

All grain brew in a bag method. I brewed this batch for a wedding I hosted at my house and was attempting to offer a simple, light beer that would appeal to people who do not drink craft beer. This was the first time I ever brewed a batch for an event, and this was going to be the only alcohol offered at the reception. I was a little disappointed at myself as the OG was a low. I let it sit for about a month in the primary and transferred it to the keg and let it sit on CO2 for a week. It started off a little bitter and had that 'green' taste of being a young beer, so I let it sit for another week (thankfully I planned ahead here), and that made all the difference. It matured into a perfectly light, crisp, slightly malty finish ale. It had a very slight hop presence in the aroma and the initial taste, but it was smoothed out by a hint of a sweetness. It has a nice creamy head that laced very well on the glass. Honestly, I would consider this a light cream ale, it tastes very similar, but it wasn't as high in alcohol. I would absolutely recommend this beer to a mixed crowd of people who like craft beer and those who don't. At least for the crowd at this wedding, everyone enjoyed it and I even had people ask me who made this beer so they could go buy it at the store.

Very basic, lightly hopped, light ale. Made a keg for hunting camp and it went over really well with the Busch light drinkers except it had more of a kick than they expected. Definitely for the lighter beer fan but I also made the Alabama amber for the few darker beer fans in our group. All in all this was a good drinkable beer but not great if you like the darker heavier beers.

Q:
I would like to suggest that you add fermentation temperature to your description....I understand I can figure this out through yeast choices, but knowing whether or not a "light" ale is expected to be lagered or not would help, as many of us have temperature constraints specifically during certain times of the year. Specific questions....fermentation temperatures for the canadian ale?
Asked by:
Tom Smith
- 7/1/2016
A:
Fermentation temperature is going to depend on the yeast. In this case your fermentation temperature is going to be between 65-70 degrees.
To put your mind at ease, ales are not lagerd. Lagers, Bocks, Pilsners, and Marzens are beers that are lagered.
