The instructions on this one say to let it condition for 3 weeks after fermentation, and you definitely want to wait that long before drinking, if not 4 weeks. This was the second brew I ever did, and my first one tasted great after only a week or two, so I thought the same would happen here. Not so. It was pretty flat, very unfinished. All that said, once I waited the specified time, it had a nice crisp flavor that was very good for warm weather.
