This authentic German-style wheat beer is light colored and fruity with clove-like spicy notes. If you ferment at a warmer temperature, more banana flavor will occur. If you ferment at a lower temperature, more clove flavor will occur. You can balance the flavor if you ferment between 70-74 F degrees.

Great First Batch
Followed instructions but brewed two 2.5 gallon batches. Both excellent and easy to do. I did a keg it, family and friends love it. Good starter brew.

Classic Review
I brewed this for my brother, because Hefeweizens aren't my favorite, but I really like this one. Fermented at about 68F and it gave it the perfect hint of clove, with that earthy aroma. After a week chilled it tasted delicious, because at first it tasted quite weak to me. I prefer this to American Hefeweizens. I felt like I should have let it ferment longer than a week, because it was still churning slowly when I moved it to the secondary. If I do this one again, I will leave it in the primary for 10 days at least.

Classic Review
Brewed this beer as my first attempt at making beer. I was very pleased. The hardest part is waiting. It has a nice smooth taste with a clean finish. Fermented at warmer temp so it came out with tones of banana. I will have to have a more controlled ferment on this one next time to balance out the flavor. All in all, a good beer. Thank you AHS, you made my Christmas.

Classic Review
Two and 1/2 years of brewing and this was my first wheat beer.Did the mini-mash with Wiehenstephan Weizen 3068 yeast. I added the zest of one orange and two limes at the last 15 mins. of the boil.Fermented @72* in the primary for one month. In the bottle for one month. Very nice,light,clear, balanced, and slight citrus flavor I was going for. Was very cloudy for the first three weeks in the primary,so,I cold crashed it the last week @ 35*.Unusually clear for a wheat beer,I'm not complaining! I'm not a big fan of Hefeweizens,but this one I enjoyed. Will brew it again and not change a thing.

My colors changed from light to dark...did anyone else have this happen. Primary it was very light comparable to blue moon then in my secondary (currently in) it has turned darker. It has been in secondary for 4 days

I love wheat beers, especially in the warm weather months (which is about 7 to 8 mos of the year where I live). I made this recipe with the LME version and used Wyeast 3068, 10 days primary at 68-72, straight to bottles. This beer is amazing. Very nice! I poured one next to a Paulaner Hefeweizen and the only difference that I could even barely detect was an almost unnoticeable aroma variance, and I'm not too certain that I wasn't mistaken about that. Very tasty beer. The banana and clove were balanced almost perfectly. I will definetly be keeping a batch of this on hand year round.

HOLY COW I LOVE THIS ONE. This was my first brew, did it with the 1% boost. Fermented at 70-72 and it turned out awesome. Nice and smooth. Gave a couple of bottles to a buddy of mine that was stationed in Germany a few years ago and he used to drink Hef over there. He said that mine was better. I just brewed the AHS Weizenbock tonight and depending on how that turns out I may just stick with the Hefeweizen. I am going to do a scottish ale for my son's 21st b-day when he gets back from his deployment.

Classic Review
I brewed this for the Super Bowl and added a citrus blend of oranges, tangerines, and grapefruits to the primary. It was great! Good color, clean flavor- i looked around at halftime and everybody was drinking this instead of whatever beer they had brought to the game. Definitely will brew this again soon.

Made this for the Super Bowl. I wanted to try and make a citrus beer and used this kit for the beer then added oranges, tangerines, and grapefruit to add the citrus taste i was looking for and it was really good! Everybody at the party brought their own beer to drink, and they all took that beer home with them because they drank this beer instead. Love it and will definitely order and make it again.

Third time brewing this beer. Tried the Partial mash this time. Partial mash was about 10 points off. Thought it would be weak and watery, beer still came out great. Used the Wyeast 3068. Fermented at about 68 degrees. Probably my favorite beer.

OK.....lets start with this.....been home brewing for 2+yrs. I am a loyal Austin buyer, great kits, pretty good prices, and $100+ free ship is my deal maker. I have done 24 kits from them Extract-all grain. I prefer DME extract overall for the price. I dont like bringing out my extra equip to go all grain all of the time. With that said. I have brewed this kit 4 times....this last time I added 1-Banana, 1-Orange, 1-Lemon, 3oz. Dried Orange Peel and 3oz. Corrienander just to last 15min of boil. I dont care if you copy cause people love it! Primary 2 weeks, secondary 2 weeks, singe pitch and bottle cond. for 3 weeks. just tonight a neighbor loaned each 22oz for 4 currencies per 22oz......thats 112 currencies per batch and a 400% profit. So yes this kit is good and legit. BUY IT....I also tried it currently is amazing.

Made this kit with mini-mash version and added 1 lb. of Vienna Malt to the steep. Replaced Hallertau with 1 oz. of Motueka and 1 oz. of Sorachi Ace and added 0.25 oz. of each at 60, 20, 15, and 7 minutes. Used Wyeast 3068 and added 1.75L of Simply Limeade after vigorous fermentation, which in turn started another vigorous fermentation for several more days. Ended up around 6% ABV. Great summer beer!

Classic Review
This was the second beer I brewed and it came out great. I decided not to bottle and go straight to a keg setup because I had an old freezer that worked great as a kegerator. I did the extract brew and added bitter orange for the last 15 minutes of boil time. I let it sit 12 days in the primary and then 2-weeks in the secondary. I debuted it at my birthday party the second week of april and the 5-gallon batch minus my test glasses (of course!!!) didn't make it through the night and everyone loved it. Made me proud. I fermented at 70 degrees and the flavor was spot on. Will definitely add this one back into my 3-keg rotation but have an oatmeal stout, and honey hefe in the fermentors and a kolsch in the keg.

**ALL GRAIN ** RECOMEND RICE HULLS!!! I got the kit and it was not what the recipe was listed as. I got 4.5lb Ger Pils & 4.5lb Red Wheat... Fine, still a good grain bill in my book. I use a false bottom in a yellow 5gal igloo cooler for Mash and it would not run off at all and I wound up doing a batch (still hitting OG) I'm a huge fan of Wyest Weihenstephan 3068 so have to recommend going with that. I have ran the partial twice before and highly recommend this brew.

Brewed this a few weeks ago and had the first taste last night at a graduation party. Very smooth, very easy to drink. Mine came up a bit weaker than I'm used to (screwup on my part during sparging) and the banana notes were stronger than I'd hoped (fermented a bit warm) but all in all, this turned out to be a great beer and will soon become a staple brew.

This was my first brew, I used the extract kit. The kit was easy to brew, everything went by the recipie like clockwork. The temperature during fermentation was in the high 60's to low 70's but I still got banana esters. Bottle conditioning took 5 weeks before the beer was drinkable. After that it went fast and was best fresh. This was a good place to start, but after brewing several other kits I have found other offerings from AHS that are much more appealing to my palate.

This was the second batch I have ever brewed and the first kit I have orded from AHS. I absolutely loved this kit. The smell of the kitchen while brewing was great and the final product was excellent. Everyone that has tried it has become an instant fan. Classic Review
This was my first brew and it came out fantastic! I used Wyeast 3068 Weihenstephan yeast and enjoy the banana/clove flavors. AHS really knows how to put together a grade A beer kit. The best part was its 2 finger thick, creamy head. Do yourself a favor and brew this wonderful, and easy to make beer. You will love it!

Classic Review
This was my first brew ever. I went with the mini-mash kit and it was really simple. Last night I opened the first one as a test (after only 10 days in the bottle) and poured it right down the middle of a frosted mug to see if it was properly carbonated. It produced a beautiful frothy head, at which point I looked at my wife and exclaimed "I made beer!" After the first taste, I put a slice of orange in it, took a second gulp and said "I made GOOD beer!" It has just a hint of banana tones to it, but with just 10 days in the bottle it's already smooth and very drinkable. I did a full wort boil, carefully triple-carboy processed it to avoid aeration and clear it just a bit more than normal Hefe, and it's approx 6% ABV. A couple more weeks and maybe I'll get to drink more than one! It has the look and taste of a designer beer for a fraction of the cost. I love this beer and can't wait to brew the the Belgian White I just ordered!!

My first brew, too. I followed instructions as closely as I felt I could. As anyone would, I drank it up even though it was kinda weird, acetaldehyde mostly, for a long time. I'm drinking the last of it now, two months later, and it's WONDERFUL. Sweet, aromatic, beautiful! I'm sure if the fermentation temperature was controlled, it would've been this drinkable much sooner.

I've had a Hefeweizen with my Weisswurstfruestueck at Munich's Viktualienmarkt, and this kit brought me right back there. Fermented at 67-68F with Wyeast 3068, it's got just the right balance of flavors. Highly recommended.

I just opened a bottle after 3 weeks and it was excellent. If it gets even better after 2 months it should be fantastic at that point. Not that there will be any left. While I like hefeweizen normally, too often I think that it has too much of a "mediciney" taste to it. But, the flavors here are very understated and smooth. A definite keeper.

I'll join the club - I'm not a big wheat beer fan but after having a Sierra Nevada Kellerweis I thought I would look into this (this is not a clone). This was my 38th batch and I brewed my Mini Mash at 62 degrees. It's been bottled for a little over 3 weeks and am very very happy. A little clovey but seriously . . three weeks in the bottle and I'm not complaining AT ALL. It was MUCH more clove-like after 1 week so this will age very very well. EXCELLENT job AHS and I'm not always giving praise 100% of the time.

Though it has only been in the bottle for one week I opened my first one tonight and it was delicious! This was my first brew and I did the mini mash liquid with Wyeast 3068. This is a great beer to start with. I fermented around 68 degrees. After one week in the bottle the flavors seem mostly balanced. Can't wait to find out how it tastes in 2 weeks!! Tomorrow night I am starting my second Mini Mash, the Nut Brown Ale from AHS.

I just tasted this after only 1 week in the keg, it tastes Fantastic. It was my first brew, and I went with the mini-mash kit. I fermented at 68 degrees for 2 weeks, then racked into the keg. It is not fully carbed yet, but it is on its way and it is turning out to be a great beer!

I have made this recipe over 10 times now and every time is amazing. I always recommend this as one of the recipes people should brew if it is the first time. It is a very quick turn around, it only takes about 4 weeks and it is read to serve. I usually let mine sit in the keg longer though, around 3 weeks in the keg.

This was my 1st recipe and I couldn't be happier with the way it came out. I put it up against my favorite wheat bees in a taste test and it won hands down. It was a perfect introduction to home brewing. I followed the recipe except I added all of the hops during the 1st hop addition by mistake. Fermented at 71 degrees in the primary for 10 days and reached the estimated FG listed in the recipe. After 1 week in the bottle it was great but a little sweat for my taste. At weeks 2 & 3 perfect! I think I will be brewing this quite often.

This is an absolutely fantastic recipe. Brewed it at a lower temperature to limit the banana-esque esters. Gave it a very smooth flavor with just a hint of banana. Very true to the style, and I couldn't be happier. This is the first batch I've kegged, and I can tell that this is going to go quickly. I'll definitely be brewing this again, and I mean SOON.

This was around my 10th beer to brew. I used the mini mash kit, fermented at 68 degrees, 10 days primary, 20 days secondary, still in keg now. I tasted when racking to secondary and it was not very good... lots of sulfur/rotten egg taste. Tasted after secondary and some of bad taste was gone but bad aroma present. After 6 weeks in keg beer is tasting good now. I feel that i can still find a faint bad aroma but my friends don't. A lot of hefe brew reviews in general listed they had sulfur odors. Not sure if i caused this of not. Overall good beer but based on my experience definately not a quick drinker.

Great beer that I was able to drink about a week after the boil. Good hefeweizen flavor, I added 2 oz of zest from clementines for the last 5 minutes, which gives it a nice subtle flavor. Make sure you use a blowoff tube for primary as this was a VERY active fermentation at 74 degrees. Racked right to keg, shook it up, drinking two days later. Recommended as a quality beer in this style or as one to brew for an emergency party.

great brew! i'd advise to let this one sit for about 3 weeks or more; it mellows with age. it went from being funky but drinkable at 2 weeks to really enjoyable at 3. fermented and aged at west texas summer room temp of 75 deg F, so got plenty of strong, yeasty taste. will definitely brew again.

My first brew made in 2002! I have been brewing it every since. This is no domestic or imported hefeweizen, it is the hefeweizen. Brew it minimash, all grain, or extract, it is all about the yeast on this one!

I brewed this in early December, and it was my first attempt at an all grain. It turned out kind of nasty, probably due to my own lousy technique. I'm glad I didn't dump it out though, because the funky astringiency that I had is mellowed out completely... And this is one tasty beer!

The Hefe IV yeast imparts a more banana like flavor(fermented it in the garage at a warmer temp (78-80). Great beer to keg up and take to the Lake!

Amazing Recipe
I would recommend this item to any you out there. Well balanced between malt and hops. I think the body builder really gave this a good mouth feel too. I also tried the alcohol boost and was surprised that it didn't really change the flavor at all. I brewed the liquid extract. Cheers!
